BURRITO PIE
1 1/2 cups mashed potatoes
1/2 package (1 1/4-oz. size) taco seasoning (about 2 tablespoons)
1/2 lb. ground beef
1/4 cup chopped onion
1/2 can (16-oz. size) refried beans (1 cup)
1/4 cup shredded Cheddar cheese
1/4 cup chili sauce
Dash pepper
1/2 cup coarsely crushed corn chips
Lettuce, tomato, sour cream, if desired
1. Combine mashed potatoes and 1 tablespoon of taco seasoning in 1-quart microwave-safe casserole. Spread evenly over bottom of dish. Set aside. Crumble ground beef into another 1-quart microwave-safe casserole; add onion.
2. MICROWAVE (high), uncovered, 2 1/2 to 3 1/2 minutes or until meat is set, stirring once. Stir to break meat into small pieces; drain. Stir in refried beans, cheese, chili sauce, pepper and 1 tablespoon taco seasoning. Sprinkle corn chips over potatoes and top with meat mixture. Cover with casserole lid.
3. MICROWAVE (high) 7 to 8 minutes or until heated through (150°), rotating dish once. Garnish with chopped lettuce, tomato and a dollop of sour cream, if desired.
About 4 Servings 360 Calories Each
TIPS Use leftover mashed potatoes or follow package directions for instant potatoes. Freeze remaining refried beans for later use.
